ONION TACOS GONNA ROCK YOUR WORLD
- cut onions.
- caramelize said onions in some oil.
- lightly brown a corn tortilla.
- put onions in the tortilla.
- squeeze 1/4 lime over the onions.
- apply fresh cilantro generously.
- roll up.
- never eat another kind of taco again. seriously.

Who knew? I'm going to have to try this one.
It's been an onion-themed week for me. A couple days ago, I was surprised how good caramelized onions are when finished off with a little balsamic vinegar and sugar.
Although I was satisfied with my onion tacos, they aren't anywhere near as good as the onion tacos I was trying to copy available at Los Gorditos (8th and SE Ankeny and 50th and SE Division). Get ye there.
